I couldn’t have gotten my new Ninja Air Fryer at a more opportune time. My two year-old stove quit working on me just days after Christmas, so I was forced to rely on my other gadgets; the Instant Pot and the unopened in-the-box air fryer. After reviewing the simple instructions that accompanied the appliance, I was able to crisp up bacon on the fly, cook up bake potatoes quickly and discover and new way of making shrimp. Gone are the days of serving boiled, chilled shrimp served with traditional cocktail sauce. When you try these Air Fryer Lemon-Garlic Parmesan Shrimp, you’ll understand why. They are amazing and addictive.
Just ask my husband. He calls them “midnight shrimp.” He says they’re the type of bite you’d crave around the midnight hour. Maybe you’ve had a few drinks... or maybe dinner didn’t quite do the trick. These shrimp will satisfy your appetite and bring a huge smile to your face. Plus, they are the perfect finger food for the Super Bowl!
Plate your shrimp as soon as they are cooked, sprinkle with chopped parsley, and serve immediately. These Air Fryer Lemon-Garlic Parmesan Shrimp are best served hot. Give this appetizer and go, and I guarantee you will score a taste test touchdown with your Super Bowl guests!
1. Combine all marinade ingredients in a medium size bowl and whisk together. Add shrimp (I leave the tails on) and cover bowl with plastic wrap or place in a Ziplock bag and chill for 1-2 hours.
2. In a small bowl, add Parmesan cheese and Panko crumbs. Stir.
3. Remove shrimp from fridge. Toss each shrimp in the Parmesan/panko mixture, pressing the topping firmly to stick, and place each one in the air fryer (you may have to do this in batches depending on size of your air fryer). Place a pinch of extra Parmesan/panko topping on each shrimp.
4. Turn air fryer on to 360 and cook for 5-6 minutes. The second batch may cook quicker, so I like to pause it at 5 minutes to check doneness.
5. Sprinkle with parsley and serve immediately. If you love extra lemon flavor, squeeze some fresh lemon juice on top.
