It’s time to let the cat out of the bag…I’m engaged! Yes, Love Happy Hour is IN LOVE. Right after I got back from my three-week Europe trip, my boyfriend decided to take me to the rooftop deck of the Griffith Park Observatory in Los Angeles and propose to me. I bawled, like, for a while. He actually needed to hear me clarify my YES! because I was so busy crying he could barely understand what was coming out of my mouth. It was a great day. We let the engagement bliss set in for about 2 days before I immediately got immersed into the marriage process madness.


Venues, date, caterers, menus, and of course, cocktails! All the details came at me like a ceremonial comet sent from another planet. It was all sparkly and mesmerizing but kind of scary and intimidating at the same time. Decision after decision needed to be made, so I took a deep breath, bought a celebratory bottle of Prosecco at Trader Joe’s and decided to make a toast with my new fiancé and get to work on our wedding cocktail!

Junipero Gin

I muddled some fresh raspberries, cucumber and mint together and then added some ginger simple syrup, gin and Prosecco to create the Gin-gagement! Thank my guy for the creative “marriage” of words. I got really excited when I thought of it at first and exclaimed, “The Gin Engagament!” He, of course, creatively one-uped me with, “How about the GIN-gagement?” Yes, he won. Compromise, my friends. Compromise.

I thought the slightly pink drink would look fantastic in a vintage coupe glass, and to any of you brides-to-be out there with blush as a color for your engagement party or wedding – this drink is the perfect blush color! I used one of those bamboo toothpicks and added a raspberry and mint for the garnish.

My Gin and Prosecco inspired engagement cocktail is just the beginning of more creative drinks to come, so be sure to check in and see what I have up my sleeves next! The Gin-gagement Cocktail

Gin-gagement Cocktail recipe.  #engaged #engagement #cocktail #recipe #gin #Prosecco #raspberry #cucumber

(makes 1 cocktail)

Ingredients:

  • 3 raspberries
  • 2 mint leaves
  • 2 cucumber slices
  • 1 & ½ oz of good quality Gin
  • ½ oz fresh lemon juice
  • 3/4 oz ginger simple syrup or simple syrup
  • ice
  • Prosecco


    Directions:

    Muddle raspberries, mint (tear up mint leaves) and cucumber slices in a shaker tin. Add Gin (I used Junipero Gin), simple syrup, lemon juice and ice. Cover shaker tin securely and shake until the exterior of the tin becomes frosty cold. Strain liquid over a cocktail strainer into a coupe glass or bucket glass with ice. Top with Prosecco sparkling wine or Champagne (around 4-5oz) and garnish with a raspberry and mint sprig. Enjoy!
