The process of making this delicious Grilled Pineapple and Jalapeño Margarita is actually quite easy. Of course, if you already have the grill up and running, then simply use the open flame to grill your pineapple and peppers. Or you can use a grill pan over high heat on the stove to achieve similar style grill marks. I like grilling the pineapple as sliced wheels, since it makes fruit less likely to slip through the grill and into the ashy soot.
Once your pineapples wheels and peppers have been grilled on both sides, remove them to cool. Muddle one pineapple wheel and two jalapeño wheels in a cocktail shaker. Add tequila, pineapple, orange and lime juice, along with some agave and ice. Shake and strain over fresh ice. How delicious does that sound? Muddle one grilled pineapple disc and jalepeno wheels in a cocktail shaker. Layer in tequila, pineapple juice, lime juice, orange juice, agave syrup and ice. Add top and shake well until well combine and tin is frosty. Remove top and strain contents into a glass of fresh ice. Garnish. Enjoy!
