Anyone close to me knows that pizza is my ultimate weakness. I love it so much, but I'm also aware that if I ate is as much as I wanted to then I could eventually have serious health problems….yes, it's that bad. I actually have a rule with my boyfriend; if you say the work PIZZA more than three times, then something gets triggered in my brain and I have to have it - kind of like the movie Beetlejuice! So anyway, I try to find "skinny" pizza solutions all of the time when I'm ordering it or making it at home, which brings me to my new recipe: Greek Lavash Pizza!
The "skinny" lavash bread is a great alternative to using a thick crust if you want to keep things on the lighter side. I found a full package of lavash bread for a little over $2 at my local Trader Joe's. FYI, they have about a week's shelf life so don't wait to long to use them - the fresher the better. I actually found all of the ingredients for this dish at Trader Joe's, including the garlic herb chicken sausages I used. Just cook them in the oven or broil them according to package instructions before slicing them up. I also recommend thoroughly draining the can of artichoke hearts and squeezing off the excess juice just before you give them a rough chop.
Other than that, this dish is very easy to make and once you bite into it, you'll understand why I had to share this "Skinny" Greek Lavash Pizza with you! The flavors are bright, harmonious and satisfying. Thyme has a natural lemony flavor to it, so not only does it as some layered flavor and speck of green, but it compliments the Mediterranean components of the dish as well. Preheat oven to 325 degrees. Marinate olive oil, garlic and thyme is a ramekin for up to an hour before use (I threw in some rosemary, too). Drain 1 can of artichoke hearts and gently squeeze them with your hands to release any excess juice. Give them a rough chop and set aside. Brush 2 sheets of lavash bread with the marinated olive oil and set aside. I sprayed the two sheets of lavash with some light olive oil spray just before brushing it, so that everything would spread evenly. Cover both lavash sheets with the shredded mozzarella, half a bag on each one. Next layer roma tomatoes, chopped artichoke hearts, pre-cooked and sliced chicken sausage, kalamata olives (I sliced each one in quarters), and crumbled feta cheese over lavash sheets. Since you are making 2 pizzas, use half of the aforementioned ingredients on each one. For example, the recipe says 2 roma tomatoes and 2 sausages; use 1 tomato and 1 sausage on one sheet and one each on the other - and same with the rest. Now evenly sprinkle fresh thyme leaves (optional) over the sheets - I used about 4-5 sprigs worth. Lastly, place sheet on an cooking pan and place in the oven for 10-12 minutes or until cheese is melted. Remove from oven, slice into 6 pieces per sheet and serve. Enjoy!
