You will definitely see me using a lot more fruits in my cocktails during summer. Since most of these summer fruits are seasonal and more affordable, it often comes down to what looks the freshest and what's on sale at the market. To be honest, sometimes I have too many options and I just get overwhelmed, so this week I decided to play with blueberries! Blueberries are great in cereal and ideal for baking, but did you know they are also fantastic in cocktails?
I apologize in advance if I rant a lot about the heat in some of my posts, but sometimes it just becomes unbearable which is why I'm usually mixing up new drinks in my kitchen. I felt like making a mojito the other day and I had most of the ingredients, but when it came to making fresh simple syrup, I realized I was out of sugar (I used it all to make lime curd earlier that day). I had limes, rum, mint and soda water but no simple syrup. It's kind of fun when you have to work with what you've got because your creativity gets challenged. Instead of running back up to the store, which I had already been to twice that day, I tried to use what was at hand in my home.
So, I channeled my inner cocktail spirit, and created what I call, The Blues Cruise. The Blues Cruise cocktail is a riff on a blueberry mojito, but I added and changed a few things. I replaced simple syrup with Bonne Mamma blueberry preserves and I added some VEEV acai spirit. The result? Delicious. I actually enjoy this cocktail better than a mojito and the color is gorgeous. Place blueberries, lime wedges and mint leaves (torn up) in a shaker tin and muddle. Add rum, Veev, blueberry preserves and ice. Shake well and strain over a fresh glass of ice.
