I couldn’t have gotten my new Ninja Air Fryer at a more opportune time. My two year-old stove quit working on me just days after Christmas, so I was forced to rely on my other gadgets; the Instant Pot and the unopened in-the-box air fryer. After reviewing the simple instructions that accompanied the appliance, I was able to crisp up bacon on the fly, cook up bake potatoes quickly and discover and new way of making shrimp. Gone are the days of serving boiled, chilled shrimp served with traditional cocktail sauce. When you try these Air Fryer Lemon-Garlic Parmesan Shrimp, you’ll understand why. They are amazing and addictive.

Wild Shrimp

Just ask my husband. He calls them “midnight shrimp.” He says they’re the type of bite you’d crave around the midnight hour. Maybe you’ve had a few drinks... or maybe dinner didn’t quite do the trick. These shrimp will satisfy your appetite and bring a huge smile to your face. Plus, they are the perfect finger food for the Super Bowl!

I purchased some wild shrimp from Argentina (wild shrimp have great flavor) at my local grocery store and peeled and deveined them first (leaving the very end of the tail on). You can purchase small, medium or large sized shrimp, but I prefer medium sized ones for this recipe. Once they are clean, simply place them in your prepared marinade for 1-2 hours in the fridge. The longer you leave the shrimp in the marinade, the more intense the flavor will be. I like mine extra lemony! Once the have spent their time being chilled, coat the shrimp in the Parmesan-panko mixture, placing an extra pinch of the coating on top for an extra flavorful crust.

These tasty, crunchy shrimp will cook up fast. I suggest checking them right at 5 minutes and seeing if they need an extra minute or so. Different air fryers have can vary when in comes to cooking temps, so I like to make sure I don’t overcook them. After you’ve cooked the first batch, the air fryer will be hotter, so they may be ready from the second batch right at five minutes.
